The traditions and folk wisdom of my grandfathers who lived through periods where everyday life was treated by simple means and mild procedures (what we currently call “Sustainable Development”), are deeply ingrained in my life.
The years have rolled by and now it is my turn to succeed my grandfathers in the primary sector. Having sought other outlets and following several alternative routes, at some point, while wondering how it was done, I finally decided that I would produce the old, simple, handmade, traditional soap using only olive oil.
I embarked on my dream without knowing that this was my destination…
My name is Leonidas Kanalis and I got involved with agriculture at the gardening level. But I wanted to continue at a professional level in order to produce soap. To do so, I had to take it to the next level in order to produce the main raw material, olive oil.
The word “Thrinax” comes from a handmade wooden tool, which is like a trident. It is composed of three teeth and is used for stirring. My grandparents blended their soap mixture with this tool.
«Thrinax» is a traditional agricultural tool which in ancient times was used to thresh straw and separate the wheat from the chaff.
By cultivating the property at Ktima Thrinax, I have managed to partially restore its biodiversity and to better understand how the land and particularly the olive as a tree thrives.
Meanwhile I have made some interventions to improve the soil’s composition, while also setting up a small workshop for the production of traditional handmade olive-oil soap.
“If you know your way, nobody can overtake you”
Over the next 2-3 years I expect to achieve my vision and aim to secure a viable business at both the financial and operational levels.
The path was long, but with slow and steady steps, I have managed to reach this point.
Now though, I need support to achieve the growth and viability of my agricultural investment.
The coming six months of my project plann, includes the activities detailed below:
• Raise the total agricultural lot from 16.5 to 50 acres
• Certify the production process in order to get official recognition of the final product (500 €) and add to its value
• Complete the restoration of the lot’s biodiversity’s in order to achieve the superiour quality I anticipate in order to create extra virgin olive oil (1450 €)
These actions concern the purchase/ seeding/ planting of specific plants and trees which are nitrogen binding, the cost of their transportation to and from the olive groves and labour costs.
Based on the above next steps, I expect to have an estimated annual olive oil production of around 5000 liters.

All the above information exclusively concerns the agricultural exploitation and the produce of olive oil for sale to third parties. It is also about the switch from a monoculture to co-cultures, and the provision of services for remuneration to third party olive-oil producers. As a professional producer/farmer, Ι am in favor of traditional agricultural processes. I use my grandparents’ lost knowledge, in which chemicals and pesticides had no place and I believe in production on a human scale.
My gratification is the pure olive oil, “accredited” in its turn by Mother Nature.
Simple everyday practices such as ablutions and washing of hands and body were possible by using simple, handmade soaps which they made themselves.
And the soap was pure because it was handmade, and had the "accreditation" of one of earth’s main raw materials - olive oil. Nature, combined with the traditional cultivation methods of the olive trees, underlined the soap’s purity.
For the production of the soap I follow the exact same traditional processes as my forefathers.
The saponification of materials is achieved using the “Cold Method” in which the olive oil is not boiled, contrary to industrial methods (Warm Method) which significantly degrades the olive oil’s properties. At times, I enrich the soap with herbs or spices from my land.
When the olive oil comes into contact with the skin, it naturally hydrates the tissue and revitalizes the skin providing a feeling of freshness.
The ‘felt’ soap gives prominence to traditional techniques and methods and their evolution into modern applications for everyday soap products, combining cleansing and exfoliation for the face and the body and replacing the sponge.
